Quick and easy salmon and vegetables

Try this 15 minute nutritious recipe with baked salmon and vegetables filled with omega 3, vitamin E, folate, vitamin E, B-vitamins and fiber.

INGREDIENTS:

  • zucchini, capsicum, cherry tomatoes and red onion and add them to a baking tray (2 cups in total)

  • 2 salmon fillets (120 g each)

  • 1 tbsp of olive oil

  • salt, pepper and herbs (like organum, rosemary)

  • 1/2 cup brown rice

METHOD:

  1. Preheat oven to 180 °C

  2. Cook brown rice in pot

  3. Chop up: zucchini, capsicum, cherry tomatoes and red onion and add them to a baking tray

  4. Add 2 salmon fillets to the same tray

  5. Coat with 1 tbsp of olive oil and season with some salt, pepper and herbs

  6. Place in oven and bake for 15 minutes
