Try our easy Mediterranean chicken breast served with quinoa loaded with antioxidants which are great for fertility as it helps to get rid of free radicals that can disrupt egg quality and ovulation. Quinoa is remarkable grain choice as it is rich in protein, dietary fiber, B vitamins, and dietary minerals.

SERVES: 2 (1 chicken breast each)

ALLERGENS: Milk

INGREDIENTS:

  • 2 chicken breast, skinless (120g x 2)

  • 3/4 cup quinoa 

  • 1 diced tomato, 

  • 1 clove garlic, chopped

  • 1/3 cup capers

  • 1/2 tsp dried oregano

  • 1/3 cup feta cheese, crumbled

  • Salt and pepper

METHOD:

  1. Pre-heat the oven to 180C. 

  2. Combine diced tomatoes, garlic, oregano, capers, and olives in a mixing bowel. Sprinkle with salt and pepper.

  3. Place chicken breasts in a baking dish.

  4. Spoon tomato mixture over chicken breast and sprinkle with feta.

  5. Bake in pre-heated oven for 30 minutes, or until cooked through and a brown.

  6. Bring water to boil in a pot and add the quinoa. Boil for 12 minutes.

  7. Dish half of the quinoa with a chicken breast.
